A long delinquent lunch post!

After seeing all the yummy oatmeal combos people keep posting, I was inspired to do one this morning. Last night I took oatmeal, vanilla almond milk, cherry Craisins, and some slivered almonds and put it in the fridge to soak overnight. This morning after yoga, I heated it up and proceeded to add some brown sugar and some orange marmalade.

Sounds good so far, right?

All that anticipation as I was making it, and after I took a couple bites I just didn't want it. It tasted fine, but I was running late for work and for some reason I changed my mind about the oatmeal. So it's sitting in the fridge for tomorrow. I forgot to take a picture of it too.

Part of the reason I was running late was that I was packing my lunch and since I haven't done a bento pic in a while I was busy taking pictures and then uploading to Flickr.

Not only have I not done a bento post in a while, but I haven't used my little sandwich box in forever! I forget how handy it is!

Today's lunch is a turkey, havarti, and spinach sandwich on whole wheat bread. I have a small campari tomato and some strawberries on the side. Not pictured are some peppercorn ranch Sunchips and the last couple squares of my dark chocolate with orange peel.

Hope everyone has a great day!

P.S.

Sweetie Pie was kind enough to remind me to remind everyone about this week's BSI, which is BASIL! You have until midnight on Sunday to submit your creations, which I look forward to drooling over.

On a sandwich roll!

Hahaha, I'm so clever!

Last night, I came home from a long day of tax torture and all I wanted was a sandwich on that heavenly pepperorn-asiago bread. I even had the whole thing planned out -- the bread, pesto, turkey, fresh mozzarella, spinach, tomato, and red onion. And some baked garlic fries. Sounds good, doesn't it? Too bad I waited too long to use the mozzarella and it was past the "eat by" date. So I had to make do with some string cheese.

Mr. Spice just wanted turkey on his sandwich and only wanted a teeny sandwich. Wuss.

I ended up grilling our sandwiches on our grill pan -- I need to figure out a better way to keep my sandwich from falling apart. They turned out really well though and I think I'll be doing more sandwich concoctions during tax season!

Be very jealous of this sandwich!

I think that I need to make pesto salmon again just so that I can have this sandwich again.

So simple but so good.

It's just some asiago-peppercorn sourdough bread, a light layer of pesto, some leftover pesto salmon, and then sliced fresh baby spinach, campari tomato, and red onion. That's it. And some baked fries on the side.

Yum yum.

The "can't sleep" bento

What do most people do when they can't sleep? Read, watch tv, close their eyes and hope that sleep doesn't remain elusive for long.

Me? I pack my lunch. And then post about it.

Well, this might be the only time I've done it so far.

I kept seeing all these cute little collapsible sandwich boxes on various bento blogs and was intrigued by them. Intrigued meaning I trolled Ebay until I found one and before I knew it had clicked on "Buy it now!!" Wonder how that happened?

Anyway, I got this over the weekend but just haven't had a chance to pack anything in it yet. It's really neat , the sides collapse down and this bottom part fits neatly into the lid when you're all done with lunch. Maybe if I'm motivated enough I'll post some pics showing how it works.

So today for lunch I've got a rotisserie-style oven roasted chicken sandwich with lettuce, a clementine, and some sugar free double chocolate Jello pudding. I also packed a couple of the chocolate raspberry Milano cookies I found at Kroger this weekend. I noticed the hubby had opened them up and already finished half the bag, so they must be good. :D

As you can see, the box is a pretty decent size. I was able to cut the sandwich in half and fit both halves in easily with room to spare. To keep the sandwich halves packed tighter, I stole a divider from one of my other bento boxes. Gotta love that early morning creativity.

I will say that packing my lunch in this box transformed it from one of those ehhhh sandwich lunches packed in sandwich bags and all tossed in a leftover plastic grocery bag into something far more appealing.

What can I say, I'm just a sucker for cute packaging.
